        焜饃

        將和好的發面團定量放入一只兩合型(上下可合蓋)的銅或鐵制的鍋內,埋在碎麥草或牛羊干糞的火堆內煨燒,不宜明火。煨燒時間在3小時左右,視銅鐵鍋傳熱快慢,適當掌握火候,一經煨好,撥開余火,取出銅鍋,稍晾一會兒打開,將饃切成薄片。此饃色黃、皮脆、內瓤松軟。
