        八寶葫蘆鴨

        將鴨脫骨去內臟,不能弄破鴨皮。再將脫去骨的鴨子抹上糖稀,晾一天。然后將蝦仁丁、海參丁、五花肉丁、干貝丁、冬筍丁、鮮豌豆、火腿丁、水發香菇丁等,用雞蛋、精鹽、味精、香油、醬油、料酒、蔥姜末找好口,喂好餡,裝入鴨內。用八成酌油炸至棗紅色。放在容器里加入蔥姜、大料、鹽、味精、黃酒、高湯,上屜蒸熟即可。 形似葫蘆,色澤棗紅,清香咸鮮,鴨肉軟爛。
