        酸菜燉五花肉

        1.將豬五花肉切塊,用沸水焯一下,撈出;

        2.將凍豆腐用涼水化透,切成方塊,用沸水焯一下,擠干水分;

        3.將酸菜片薄,再切成細絲,用溫水投洗兩遍,擠干水分;

        4.將鍋置于旺火上,倒入植物油燒熱,放入白糖熬成糖色;

        5.把焯好的豬五花肉塊放入鍋內急速翻炒上色;

        6.在沙鍋中添入高湯750克,放入五花肉、蔥段、姜片、精鹽、花椒水;

        7.用大火燒開后轉入小火燉至豬五花肉塊八成熟時,放入酸菜絲、血腸片、水發粉條、凍豆腐塊、海帶絲;

        8.燉至豬花肉塊酥爛、凍豆腐塊嫩軟入味,加上胡椒粉、味精即可。
