        扒雞茸發菜

        內蒙古名菜。以內蒙古特產發菜為主料,雞茸為輔料扒制而成。將發菜用溫水泡發、清洗整理干凈。雞脯肉制成茸狀,加蛋清、淀粉和精鹽、味素調成糊。凈發菜拖雞茸糊下入熱水鍋汆熟撈出,碼在盤內。勺內放底油,蔥、姜絲熗鍋,烹料酒,添雞湯,加精鹽、味素等燒開,撈出蔥、姜絲,撇去浮沫,用淀粉勾成芡汁,點香油澆在主料上即成。此菜具有質地軟嫩滑爽,口味清香鮮咸,色澤黑白相同等特點。
