        豆瓣原汁大馬哈魚

        先將大馬哈魚打上花刀,用醬油先鹵,再入鍋油炸。鍋內留底油,用蔥、姜炸鍋,下肉丁、豆瓣醬煸炒,添清湯、醋、精鹽、味精、白糖、辣椒面和炸好的大馬哈魚,用文火煨燉。待汁味漬入魚內,淋入香油,撒上香菜段即成。成魚色澤醬紅、醇香味重,富于濃郁的地方風味。
