        清蒸鰻魚

        連云港市東海縣鰻魚養殖已有多年歷史 清蒸鰻魚是取鰻魚一條,約500—750克,宰殺后放入溫熱水中燙去身上的粘液,取出內臟,沖洗干凈,蔥、姜切成細絲備用。將鰻魚斜刀切成約3厘米的片,擺成梅花形,鹽、味精、糖、胡椒粉、紹酒兌成汁澆在鰻魚身上,然后放入豬油,用保鮮膜包好入籠蒸8—10分鐘即好,取出放上蔥姜絲,澆上熱油即成。( 連云港)
