        油煎蝦花餅

        取一斤多青蝦,放在清水里稍養,去污泥和雜質。再取二斤多面粉,放在面盆里用冷水拌成面糊,再把青蝦(剪掉腳和毛須)放入面糊里,再加少許食鹽和切細的香蔥,用筷子拌勻。用鏟刀把青蝦和面糊(一小團)一起放入滾燙的油鍋里煎約20分鐘,等青蝦逐漸變成粉紅色后,用笊籬把它撈起來,就成了一只只香脆可口的蝦花餅。
