        桂花焐熟藕

        桂花焐熟藕,是蘇州秋季時令佳點。蘇州的糖藕,在唐代就已經名冠全國,蘇州人就地取材,用上蘇州特制的糯米及秋季遍開的桂花,就有了這道甜、糯、酥、香的美味佳品。做法是取藕中段,把糯米塞入藕段中空處,用筷子將切去的頭部與中段用牙簽或竹筷重新整合成條,在加了綿白糖、甜桂花、赤砂糖的鍋水中蒸煮,最后就看到了色澤醬紅、汁水如蜜、入口清香甜糯的桂花焐熟藕。也有用玫瑰甜醬、桂花甜醬或其它花露蘸食的。
