        蝦爆鱔背

        蝦爆鱔背做法是將鱔背肉切條,用鹽,黃酒,生粉,面粉,水掛糊,把蒜茸,黃酒,醬油,白糖,醋,生粉調成芡汁,把鱔背逐條下入七成熱油鍋,炸至結殼撈起,油溫升至八成熱時,下鍋復炸至金黃色,撈出裝盤,鍋留底油,澆在鱔背上,放上劃熟的蝦仁即成。蝦仁玉白鮮嫩,鱔背黃亮香脆。
