        南湖船菜

        南湖船菜

        流行于民國時期,為嘉興南湖游船之特色菜。以八大碗八小碗為正宗,亦有八小碗六大碗或六大碗六小碗、四大碗四小碗等規格。用料以蟹粉、蟹黃、河蝦等有南湖特色的時鮮為主,烹調考究,冷盤尤佳。近人徐坷為文說:“船菜為禾中畫肪特殊之撰”,“春秋佳日,肆筵設席,絲竹清音,山水真趣,皆得之矣。”抗戰時游船廢,船菜消失。參見本志《名勝古跡與旅游》篇。
