        寧波鰳魚肉丸湯

        寧波傳統時令菜。主要作料為咸鰳魚和肉丸。先將豬夾心肉剁末捏成肉丸;將咸鰳魚去鱗和內臟(保留魚子),洗凈,取中段切成塊,放在碗底,蓋上筍上,把肉丸排在筍片上,再放上香菇絲、姜片、蔥結、紹酒,上蒸籠用旺火蒸熟;揀去蔥結、姜片,潷齒汁,將魚塊和肉丸復扣在大湯碗內;取炒鍋置旺火上,加入原汁和清水煮沸,撇去浮沫,加味精、蔥段,倒入大湯碗即成。魚鮮不腥,湯清味醇,食之回味持久。( 寧波)
