        寧化伊府面

        伊府面,是寧化縣清代書法家伊秉綬在揚州任知府時所創。做法:將蛋去殼打勻,拌入面粉,用涼水和好揉勻,制成扁薄面條,用開水煮七成熟,撈起、使涼,放入鍋中熱油內炸后撈出,然后在鍋底內放油,將切好的肉絲、筍絲、白菜絲炒后放入面條,加花椒粉、蝦米、姜、蔥、醬油,炒后添適量的湯,慢火稍燜即成伊府炒面。如用好湯煮,即為伊府湯面。
