        永春鹵面

        永春鹵面

        主料:生面條300g

        輔料:水發蝦米25g、黃瓜100g、肉米50g、豬油75g

        調料:胡椒粉2g、鹽2g、味精9g、加飯酒25g、

        水發香菇50g、鴨蛋2個、高湯750g、蔥白50g、香油、蔥花。

        烹調方法:黃瓜去皮、籽、切片;水發香菇切絲,蔥頭切成指甲片,炒鍋燒熱,下豬油75g加蔥頭片,炸至金黃色,

        撈起待用,余油下黃瓜炒片刻,加蝦未、香菇絲、鹽、肉米加少許水攪散,高湯燒沸,加生面條蓋上鍋蓋,

        用中火燜5分鐘至面條酥爛;鴨蛋去殼打散下鍋翻動面條,加味精、加飯酒、胡椒粉、香油調好味裝碗,撒上炸好的蔥頭片、蔥花即成。
