        荷包魚翅

        已故閩菜大師強祖淦,是泡發干貨的專家,他煨制的魚翅,首屈一指。其侄兒繼承大師衣缽、泡發、煨制魚翅的技藝精湛。原料選用上等背翅,成品質地軟 滑透明,味道香醇、葷潤,形如荷包,美觀雅致,故名“荷包魚翅”。此菜用料精細,制作考究,分別用3種茸料精心提煉而成,故而亦稱“三茸湯。”
