        干貝熘黃菜

         干貝熘黃菜屬清真菜。先將蛋黃打散,加入濕淀粉、紹酒、涼牛肉(雞肉)湯攪勻。再將蒸好的干貝撈出控凈水分。鍋放火上,加入植物油,燒后將蛋黃慢慢下鍋,不斷攪動,熟時先盛部分于盤內,再放干貝攪拌均勻,淋上雞油盛在上面即可。此菜色澤金黃,味鮮濃香。
