        清氽赤鱗魚

        概論:泰山赤鱗魚,又名石鱗魚,是一種珍貴的野生魚類。它肉質細嫩,含有較高的蛋白質和脂肪,滋味極鮮。據傳,清代乾隆皇帝曾多次游覽泰山,每次必食此魚。因而在清代被列為泰山名菜之首,馳名中外。赤鱗魚可燉、可氽、可熘,但以清湯氽煮為佳 特點:用泰山赤鱗魚清湯氽制而成。成菜魚肉絕嫩,湯清味美,無魚腥味 工藝:將魚治凈,入沸水鍋氽熟,撈出放在湯碗內,加胡椒粉。炒鍋加鮮湯、鹽、醬油、花椒、紹酒、味精,燒沸,撇去浮沫,倒入魚碗內即成。隨跟姜末醋碟上桌。( 濟南)
