        齊河豆腐皮

        豆腐皮制做工藝與千層豆腐大致相同,其壓擠水分的時間比千層豆腐更長,所以含水量極低,單頁折疊為細長筒狀,經壓而成長方條,稱坯子。坯子放入淡鹽水鍋內煮進咸味,取出晾去水分即成,大體0.5公斤10條(也有大包者如大夫營一帶0.5公斤兩條,且加醬色)。仁里集鎮一帶制作工藝精細,其皮子質地細嫩、口感好、有韌勁、薄如紙,備受青睞。
