        蓬萊鹵驢肉

        清咸豐七年(1857)蓬萊城南門外黃開基首創.三代專擅,在上海、營口、煙臺等地開店經營,頗具名聲,享有“蓬萊鹵驢肉,天下無敵手”之譽,制作方法:咸水下鍋,待水溫升至60一70”C時放入大塊驢肉,煮至九成熟撈出,沿橫剖面切成半尺見方塊,然后另換清水,兌以適量八角、茵香、桂、花椒、桂皮等17種配料,放人肉塊,文火燉煮,肉熟后加鹽適量,稍燜即成。特點:色紅、透明,溢香撲鼻,鮮嫩爽口,為下酒佳肴。城鄉飯店、餐館及農貿市場多有銷售。( 蓬萊)
