        特色脆鹵肉以豬五花肉為主料,以生粉,糯米粉,澄面,雞粉,味精,白腐乳,紅方腐乳,白糖為輔料制作而成。其烹飪步驟是先將五花肉切成12厘米長,5厘米寬的厚片,入流水沖去血水,用毛巾吸干水分,將生粉、糯米粉、雞粉、味精、澄面、白腐乳、紅方腐乳、白糖、米酒和勻與五花肉片拌勻,然后將五花肉晾在通風處至干,最后將晾好的肉片入四成熱的油中炸熟,撈出控凈油,與香蔥段、黃瓜條、香椿芽、面餅同食。其特點是香脆可口,肥而不膩。
