        菊花肉

        菊花肉系部分豬頭肉與豬耳朵通過數道工序做成,系淅川縣的一道特殊涼菜。在做法上,將豬頭肉與豬耳朵加五香佐料放在鍋里煮。 肉煮熟后將豬耳朵取出,肉繼續煮。豬耳朵放涼后,切成1.5公分細長條,在平底狀的餐具里擺成數朵菊花圖案。豬頭肉煮成糊狀后,倒入放在約5公分、寬3公分長方形肉塊,澆上芝麻油醋、蒜。
