        糖蒜

        糖蒜糖蒜是開封傳統食品。"小滿"節氣前后上市的鮮蒜頭,選其質嫩、皮白、個大、無傷爛者,修整齊后,入水浸泡六至七天,繼入缸內先用鹽腌制,鹽化后撈出再用鹵汁(食糖、食醋兌水煮制而成)入缸內腌制3個月,即為糖蒜。

        糖蒜所用食糖,紅白均可,因而成品色澤分茶紅、金黃兩種,風味有別,特色各具。清末以來,開封居民多能自制備食,而開封釀造廠所產為最佳。
