        紅安綠豆丸子

        創于清末。丸子香軟,呈褐紅色,約野雞蛋大小。制法:綠豆、飯豆2:8的比例,混合投人清水中浸泡一天左右,洗凈撈起,加適量的水磨成漿,用匙挑起球狀,逐個放進熾熱的油鍋中,炸成金黃色即成。丸子常作復合菜,也可單獨食用,如加些香料,吃起來味美可口,疏松香甜。
