        蟹黃豆腐

        蟹黃豆腐為當地名菜。其制法為:選用茅山活螃蟹兩只,將活螃蟹洗凈,放入蒸蘢,在旺火上蒸熟取出,用竹片剔出蟹肉。碗中盛豬肉湯二兩,將蟹殼翻身放入湯內淘洗出蟹黃。雞蛋黃在碗內攪散,水豆腐切片,放在旺火上沸水鍋里燙一下撈出,盛碗加豬肉湯。將炒鍋置旺火上,下豬肉湯、蟹肉,加精鹽、姜末、辣椒油、豆腐、味精、蔥白、濕淀粉燒沸成蟹羹,淋入攪散的雞蛋黃,邊淋邊勺推勺,再下熟豬油,起鍋盛盤,撒上蔥花、胡椒粉,即成。( 浠水)
