        三臘合蒸

        用臘雞肉200克,臘魚200克,臘豬肉200克,熟豬油50克,肉清湯5克,味精1克,干紅椒3只。制法:將臘雞去粗骨,臘肉去皮,臘魚去鱗,切成3厘米長、6毫米寬、2毫米厚的長形條、片。用碗將臘雞、臘肉、臘魚分三方扣好,放入適量的豬油、肉清湯、味精、豆鼓、干椒末、亦可裝入蒸籠,約蒸1小時,吃時將碗翻倒在另一只盤內。特點:顏色美觀,香醇多味。
