        子姜炒血鴨也是嘉禾頗具特色的名菜。據說原來是一道“懶人菜”,現在筵席上可缺少不得。“子姜炒血鴨,呷了還想呷”。血鴨的普遍做法是,取不嫩也不肥的家養鴨,待鴨肉煮熟,鍋內剩下許湯汁時,再把備好的鴨血慢慢淋下,幾經翻炒,待鴨血均勻地附在鴨肉上起鍋。
