        炒羊肚絲

        [原料/調料]

        羊毛肚(或豬肚)600克。小蘇打1茶匙,大蒜茸l茶匙,醬油、紅辣椒絲各1湯匙,筍絲、韭黃各1/2杯,用醋1湯匙,酒1湯匙,生粉1茶匙,香油1/2茶匙及適量鹽做成調料

        [制作流程]

        ①將毛肚一塊,用水煮l小時至軟,撈出后切細絲,再用約6杯水加小蘇打煮30秒鐘左右至熟爛為止,撈出沖洗一下,濾干水分。

        ②用熱油3湯匙將肚絲爆炒一下并淋醬油1湯匙調味,隨即撈出再濾干。

        ③將炒鍋燒熱,用3湯匙油炒紅辣椒及筍絲,并加入毛肚絲與韭黃,淋下調汁,用大火炒勻即可。
