        乘火麒麟

        是由傳統湘菜"糖醋脆皮魚"發展創新而成,它以3斤左右的鱖魚或鯉魚為原料,加工成糖醋脆皮魚,在加工時注意體形,使之象麒麟,置之盆中,澆以燒酒,上席時點燃,魚周發出藍色火焰,宛如麒麟噴火,四座皆驚,象征吉祥如意。此菜構思精巧,造型奇特,而且昧鮮色美,酸辣甜脆,常為接待貴賓的壓席菜。
