        廉江炒田螺

        田螺與石螺不同,它的特點是殼薄肉厚,與芳香草紫蘇同炒一鑊,產生香中有辣、辣中帶甜的怪味,南方人、北方人、港澳同胞以及外國朋友都十分喜歡。做法:燒紅油鑊,把蒜茸、紫蘇葉、沙茶醬、豆豉等爆香,加入田螺不停地炒,濺入滾水,用精鹽調味,炒至熟透。勾芡加包尾油、麻油和勻上碟。
