        升平竹升面

        升平竹升面盛行于解放前及五六十年代。始創人為古勞上升升平墟一叫“安南仔”的師父,將面團置于案板,用“竹升”(圓竹扁擔)作搟面杖,一頭固定成了支點,一頭用力移動搓磨,揉拉成條。經制成的面條,大小一致,柔韌軟滑,富有彈性,久煮不糊,完好如初;吃起來,滑、爽、脆兼備,令人食而不厭。若拌以魚片、牛腩,其味更是無窮。
