        紅燜豬手

        用料:凈豬手600克。調料:大蒜2瓣,蔥半棵,精鹽3茶匙,白糖3茶匙,味精2茶匙,高湯2湯匙,二湯1湯匙,深色醬油、濕淀粉各0.5湯匙,花生油3茶匙。

        制作過程

        將蔥洗凈切段;大蒜剁茸。 將凈豬蹄涂上深色醬油,下溫油鍋中炸呈大紅色,而后放燉盆(要用竹箅墊底──加高湯、精鹽1茶匙,白糖1.5茶匙,放火上煲1小時至稔爛,撈起待用。炒鍋內放油0.5湯匙,加入大蒜茸,蔥段和精鹽、二湯、白糖、味精、豬手、略燜后,用深色醬油加濕淀
