        蘸仔鴨

        蘸仔鴨是客家人閑不住夏季的美食。五七月間是鴨仔上市的的季節,在客家城鄉隨時可以品嘗到這道鮮美的時菜。蘸仔鴨用嫩鴨作原料,以生僵、大蒜、醋、白糖、糯米灑作配料。將鴨宰殺,去除內臟、洗凈、燙熟,用新鮮豬油涂抹一遍,切成長方小塊。然后蘸以僵油,金不換或蒜仁醋,風味獨特。( 梅州)
