        醋溜魚

        醋溜魚是佐酒佳肴。鯇魚作原料,用生僵、大蒜、酸醋、白糖、白鹽、羅卜絲作佐料。將鯇魚去鱗洗凈,在魚背劃割幾刀,擦上精鹽,略腌片刻,用生油炸熟。然后將生僵、大蒜炒香,配以糖水、醋澆覆在魚上即成。魚肉酸甜,酢香。(梅州)

        選用鯇魚作主料,宰殺去鱗洗凈后在魚背劃割淺溝,擦上精鹽略腌片刻,放進油鍋炸熟,撈起裝盤,撒下少許炒香的姜絲及大蒜,再用糖水與陳醋混合一體的佐料澆在魚上即成。醋溜魚皮酥肉嫩,酸酸甜甜,甜甜酸酸,撩人食欲,異常開胃。
