        油酥竹鼬

        竹鼬,身大如兔,本市俗稱“hou子”,是巴山特產野生動物,常年生活在土內,以嫩竹根為食,因此其肉細嫩賽雞。油酥竹鼬的做法是選一至二公斤的竹鼬,宰殺后去毛,在清水中浸泡去血水,然后下鍋煮熟晾干,在全身抹上鹽、姜汁、花椒面、醬油等佐料,再用雞蛋面糊穿衣下炸,炸至透身金黃起鍋裝盤,最后以高湯、淀粉加少許白糖、胡椒熬成汁,遍淋全身即成。吃起來外酥內嫩清香可口。還可紅燒、清燉、烘烤,口味亦佳。
