        什錦燴面

        制作時在面粉內加入堿和清水,反復揉勻,搟成面皮,越薄越好,再切成菱形片,撒上淀粉待用。將豬腿肉、火腿、豬肚、雞肉、鮮筍、香菇均切成菱形薄片,黃花切成段,木耳撕成片,雞蛋打散后加川鹽攪勻后待用。炒鍋置旺火上,加適量清水燒沸,下面片煮斷生撈起。鍋內放入熟豬油,甜面醬炒,然后下肉片,隨即加火腿、豬肚、鮮筍、黃花、香菇、雞湯、雞肉燒開后,再加川鹽、醬油、木耳、姜末。第二次開時下入面片,燴煮入味后淋入蛋漿攪勻,起鍋放入味精、胡椒粉、蔥花后就可以了。味極鮮美,營養豐富,為早點和夜宵佳品。( 達川)
