        鎮遠道菜

        鎮遠道菜,相傳為鎮遠青龍洞中的道士所創,儲藏愈久品味越好,故也稱陳年道菜。制作方法是以青菜作原料,置陽光下曝曬至菜葉發軟后洗凈,再晾曬至八成干加鹽揉搓,入缸內腌一夜,再曬再揉反復四、五次,使鹽完全浸入菜的葉和莖內,再用甑子蒸,灑上白酒,入壇密封3個月后即可取出食用。食用方法為:涼拌、炒食、火鍋配菜、湯菜等。
