        鴨子稀飯

        取紫米(一般的米也可以),適量(因人而定),用清水淘洗,泡脹待用。鴨子應以飼養一年以上為佳。宰殺洗干凈,把整只鴨子放進鍋里,一次性加足水,同時把紫米和鴨血、鴨內臟混入鍋中,用旺火將其燒沸。取茴香適量,洗凈剁成寸長放入鍋內,把兩粒草果用炭火燒至焦黃,搗碎放進鍋里。鍋中水燒沸后改用溫火慢慢熬1小時左右,撈出鴨子,撕下鴨肉重放鍋內。投入適量的鹽、味精、豬油,再熬10分鐘。一道風味獨特的鴨子稀飯就做出來了。( 西雙版納)
