        沙塘米酒

        沙塘米酒色呈淺黃,酒清見底,醇香可口,富有后勁,立冬后至冬至制作為佳。制酒時用柳條糯米50斤洗凈,浸泡4小時左右,撈起濾干,上甑蒸熟,再將糯米飯倒入竹盤內冷卻,冷至20度左右盛入甑中,用一比一的冷清水沖涼,邊沖邊放入酒藥(50-60克)。待濾干后,放入缸內密封保溫。四天左右出酒,脫缸后倒入大缸,將原洗米飯的水及酒藥倒入,封好,一星期后用鍋鏟攪動,待浮糟后,過濾,即可煮沸食用。封缺陳釀半年更佳。
