        〖烹制過程及原料〗

        其做法是:選取用肉寶膏滿、閩南沿海特產的紅鱘入鍋,放少量食鹽,煮至水干殼紅,透出一股蟹香,取出切片裝盤上桌。此時肉白似玉,膏紅如丹,味道清鮮。食時配以姜絲,佐以辣料。
