        盤馓

           馓子為精美的油煎食品。積石山縣穆斯林在節日和喜慶日子,必做馓子招待客人,并饋贈親戚、鄰里。     馓子分“盤馓”和“酥馓”兩種。做盤馓時面粉用溫水調和,再加清油、蛋清、花椒水拌勻,反復揉和,切成圓條,抹油,盛入容器中封實悶窩,窩好后揉搓為筷子粗細,盤繞,用筷子套住整形,將一頭折疊入油鍋中,稍炸,再將另一頭折疊過來油炸,待定形后抽出筷子,再炸,待皮黃后撈出,形狀美觀,色澤黃亮,條桿勻稱,香甜酥脆。做“酥馓”時,調面時加入清油、蛋清、白糖,揉好面后切成圓條,窩好后揉條壓扁,盤繞下鍋油炸而成,疏松酥軟,入口即化,味美可口。制作馓子是整套復雜的工藝系統,全憑經驗掌握好“度”,還要掌握好火候,只有這樣,才能做出佳品。
