        西北大菜

          香飯現叫西北大菜。張掖諺語云:唱戲憑的腔,筵席看香飯。據說香飯是在清康熙年間宮廷名宴中的首一道菜。這道名菜,是用豬和羊的肝肺剁成碎未,把蔥蒜未摻進去,拌勻,加調料、食鹽,并用面粉和成面團,再搓成圓條,用油炸熟,叫卷肝子。再將卷肝子切成圓片,拼碼在碗內,加調料蔥蒜,另拼大肉片子,加肉湯蒸好后,扣于另一大盤內,加雞蛋索子,澆上汁子烹調而成。
