        ----豬臟面是用豬大腸烹制的風味面食,清代蘭州人創制,民國時以宣家巷的風味最佳。因制作精巧、軟爛醇香、風味獨特而頗受歡迎。 做豬臟面時,選用新鮮的肥豬腸,用食鹽、堿和醋水反復搓洗,并用清水沖凈,直至除去異味。食用時,再用煮過面的灰湯將腸煮熟,切成小段。將拉面條撈至碗里,澆湯,加肥腸段,并調以蘿卜片,佐以蒜泥、辣椒油、食鹽、大蒜、陳醋等,吃起來光滑流暢,風味獨具。( 蘭州)
