        蠔豉

        蠔豉也稱“蠣干”,是牡蠣肉的干制品,也是廣東一帶的漢族風味名菜。它的肉營養豐富,素有“海牛奶”之稱。蠔豉的制法有兩種:一般是把鮮牡蠣肉和汁液一起煮熟,再曬干或烘干,制成“熟蠔豉”。如果要保持全味就不煮,把牡蠣肉直接曬干,便成為有名的“生曬蠔豉”
