        油煎洋芋

        在街頭,常見一個個賣油炸洋芋片的小攤,甘谷人稱之為油煎洋芋。把洋芋去皮后切成厚片,入鍋煎炸,待黃亮熟透后從油鍋中撈出,變脆后,撤上用辣椒面、花椒粉、精鹽等配制的調味品即可食用。色澤黃亮,香味撲鼻、脆香可口、油而不膩。甘谷縣傳統飲食“薈菜”中常拌入角片狀油煎洋芋,使之別有一番味道。
