        脆皮百花腸

        脆皮百花腸,其實來源于百花餡,一種用‘蝦膠’制成的傳統粵式點心餡,“香、滑、爽、脆”是食客對它最統一的評價。脆皮百花腸始創于1990年,被佛山市評為“佛山十大名小吃”。脆皮百花腸先將蝦肉剁碎,加入味料和肥豬肉粒清蒸;蒸后用煎炸一定程度的腐皮卷好,再裹上一層薄薄的粉皮。
