        腌蟹酒香濃郁,做法上采用腌的技法,又不同于熗和抱腌,只用少量的白酒,但對鹽水的濃度要求很高。1桶梭子蟹(約10千克)洗凈,放入濃鹽水中(鹽水濃度飽和),加50克白酒、100克生姜、5克明礬(可以使蟹殼變脆),用保鮮膜封口,放在0度恒溫箱腌漬30個小時即可,上桌時取出腌好的蟹,改刀成塊,淋少量白酒(既殺菌又增加酒香味),蘸姜汁即可。【詳細】
