        銅仁三大碗

        銅仁三大碗指的是扣肉、膀、粉蒸肉(又名面面肉),為銅仁傳統的待客名菜,也是銅仁傳統宴席名菜,因三菜均系扣入碗中烹蒸扣盤上席,故名“三大碗”。其扣肉與粉蒸肉選用五花肉,五花三層;膀,系用豬腳喇叭肉,肉質分明,香氣濃郁,肥瘦相間,食而不膩,軟而不綿。扣肉具有鹽菜的特別香味;膀色鮮味美,肉滑質細;粉蒸肉糯而清香,酥而爽口。
