        細香碟兒上灶是安陽一道地道的傳統名菜,屬于豫菜。此菜選用香菜梗、筍尖梗、蘆筍梗、熟牛舌、熟肚頭、帶皮五花熟肉、熟牛肉、蓮菜、蒜黃、芹菜等制作而成,酸爽開胃,營養豐富,用料普通,名氣兒卻不小,躋身安陽傳統名菜之列,昔日無論大酒樓小飯館,菜單上都缺不了這道菜。所謂細香碟兒上灶,其香源自這道菜是用小磨香油烹炒,細則體現為普通食材選料之精細和刀法的細膩,鮮嫩的白蓮藕,切成火柴棒粗細的絲兒,約半寸長短,迅速焯水。香菜梗兒稍粗,只取中間較嫩的一段。肉絲兒選用的部位則是豬肋骨旁最細嫩的黃瓜條兒,切成長短粗細均勻的絲兒,
