        鶴慶吹肝

        吹肝是大理鶴慶傳統菜肴,每年一入冬,在鶴慶,幾乎每個家庭主婦都會做,家家戶戶都要腌制這傳統美味。吹肝是滇西北各民族(白族,彝族,納西族等)常采用的豬肝做法,而大理鶴慶人則將新鮮豬肝用插入的麥竿兒吹脹到最大,然后撤掉麥竿兒,將脹大的豬肝用蒸籠蒸熟,放涼,切片,拌入芫荽、醬油、醋、辣椒、味精和鹽后即成,其味極爽口,并且沒有通常豬肝特有的難吃的味道。吹肝涼片是吹肝最簡單的吃法,鶴慶人也喜歡炸吹肝,吹干切片后倒入油鍋里煎炸,配上薄荷去腥并提亮顏色,香脆可口。無論清蒸或油炸,味道都濃香可口,味道上乘。Maigoo美
