        高塘清湯素雞是宣城郎溪高塘的特色菜,以素仿葷,風味獨特。郎溪高塘素雞的制作十分考究,頭天晚上將挑選的上等黃豆浸泡,第二天清早,黃豆上磨時不快不慢,然后制成豆腐皮浸于堿水中,堿水的濃度經雙指相搓感膩為宜,片刻撈出卷成圓柱形放入竹籠中旺火蒸透,再將其磕實,切成半寸厚片,以菜油小火熬炸,再用沸水燜熗至內外韌軟,擠出殘留堿汁,清水漂凈,放入適量鹽和姜加葷湯水同煮即可。這樣制作的素雞嫩黃油光,耐煮而不渾湯,吃起來細膩、嫩脆、美味可口,逐成一方名肴。
