        李涼粉

        南充李涼粉是南充特色美食小吃之一,與川北涼粉齊名,其鮮香紅辣、溫和柔軟、細膩可口,尤以紅油叫絕,八十年代初,由南充順慶區華風鎮農戶李氏制作,采用優質豌豆去殼,用水浸泡后,推磨成漿,然后過濾去渣,沉淀脫水,制成豆粉。再經加熱熬成糊狀,裝入盆、盤內冷卻成塊狀,便做成了細嫩綿軟的涼粉。用青皮碗豆做出來的涼粉呈深綠色,用白碗豆做出來涼粉呈米黃色,吃時,用刀切片稱為“片子涼粉”,用刮子刮成細條狀稱為"旋子涼粉",盛入碗內,將碎粒大頭菜散入涼粉上,再加上蔥花、醬油、精鹽、味精、蒜水等,最后,淋上秘
